I loved crossbow hunting, so I wanna keep hunting within 80 yards, but want to move on to a rifle. I loved shooting my grandfathers 30-06s (Winchester model 70 and 1903), but now I wanna get a gun to hunt deer with. I really want a wood bolt action with iron sights, and I love the looks of the mosin. My problem is that I have no way of trying out a mosin before buying one.

A lot of target guns in 38 spl had throats and forcing cones cut specifically for target ammo and wad cutters in particular.
That said most of the time 38 is just used in mechanically weaker variations or frames.

Gonna be buying my first rifle in a couple months. I'm not new to weapons. Was in the military, been shooting since I was a kid but never really had the money to buy my own.
Been looking at the Mossberg Patriot .30-06. It's aesthetic to me. It's Bolt Action which I love, and it was a big gun in 2015. Is this a good choice on a budget?

I honestly think you could do better than a Mossberg for an out of the box basic bolt-rifle, but I do agree it looks nice.
If you're planning to shoot a whole bunch it's worth it to make a bigger long term investment in a higher quality gun. There are a variety of value bolt actions that are typically marketed as baby's first hunting rifle and they perform well for their value but why settle? What do you plan to do with the rifle and what're your personal goals? Do you plan to hunt and harvest game or are you just looking to practice marksmanship? .30-06 is a wonderful caliber but a waste of money as a range toy. Guns are tools, so make sure the one you get is built for its intended purpose.
You should take what we say, the youtubers say, etc. with a grain of salt. At the end of the day it's you who's gonna be shooting it and if you love it that's what matters.

Ruger SR45 and Walther PPQ M2 are the first two that come to mind besides Glock. Beretta PX4 Storm and Sig P320's come in 45ACP too. The FNX usually breaks $600.
