I can't decide between buying a Sig P250 or a P320 next. Who here has info on them? I know the 320 can't convert from 9mm to .45, but I have heard that the 250 can?

heres what happens with caliber conversions. they cost 1/2 to 2/3 of the actual gun. you buy both then only shoot whichever caliber you like more the other kit never gets used except for the first time you tried it and sits in a parts box forever.
250 only has a shit double action trigger so cops don't shoot themselves. 320 has a good striker fired trigger by most accounts. Otherwise they are functionally very similar.

The caliber conversion would also be for the purpose of size. I prefer .45 for concealed carry, but my job requires 9mm. So one gun with both options would be nice, a subcompact 45 and a full szed 9mm in one gun.

Hmmm. It would have to be manufactured as 2 halves. And the tolerances would have to be pretty tight. ie expensive.
If you make a standard lower and then cut it in half, that would be illegal. Same reason demilled guns for parts kits have to have the receiver torch cut in 2 locations.

I've actually been working on this exact question since I build bolt together AR lowers on my 3D printers.
I'm going to assume you're in the US since building your own guns isn't exactly a thing outside of the states (or Canada).
It comes down to the Firearms Technology Branch, which is a division of the ATF. Essentially you would have to send each part in for a determination and wait for a letter.
The problem is there is no consistent definition of what is legally a firearm in these cases, and FTB's determinations are often arbitrary and illogical at worst.

You would to go well beyond that to stay kosher. We're talking 2 factories, possibly owned by different companies making each side because of constructive possession. Again what constitutes "Readily convertible" is also up for debate. The real question is at what point do those 2 pieces legally become a firearm according to the FTB? If you put them together, fire it, then separate the 2 halves, do you then have 2 firearms or 1 and which half? What if you take half and build yet another firearm with it?
Questions like these go on and on forever because the system can't possibly make sense of it all, and ultimately it would be up to FTB and I hope you got really good lawyers if they decide to change their opinion.
See Technology Branch letters have Quasi-legal status. The short version is if they are being using to screw you they are as good as law, if you're trying to use them as part of a defense case they are merely "opinions of the bureau" subject to change at any time.

It seems like a great idea to be able to station fighters around key defense points, such cities/ports/etc, and scramble then quickly without needing a nearby runway. Yet I've never heard of it until now, nor have I ever seen the concept practically utilized.
They could easy be launched if enemies were detected on radar, defend the area until out of fuel or ammo, and then land at an actual airstrip somewhere else.

Just have one mounted to a truck bed type of deal that follows the armor. When enemy planes are sighted the trailer could launch the fighter and it'd be able to cover the ground forces quickly. Seems like a great idea before missiles were the end all defence

The adjustible gas setting has to be set properly to the rounds being fired. Now this normally isn't a problem except for right when it was being used when you had all kinds of crazy rounds in service with light and heavy ball loads as well special loading and all sorts of supply problems. Combine this with troops needing the knowledge to put it on 1.1 or 1.2 with heavy ball and 1.3 or 1.5 with light ball and you start running into problems.You also need to possibly adjust the gas pison up a notch after protracted shooting gunks up the port and piston.
Properly set it runs like a dream even when you squeeze in two stripper clips of rimmed ammo into the magazine. Low recoil like all short strokes.

Ammo isn't cheap, clips aren't either and aren't the easiest to find, and they can be finnicky. They kick like a horse and use a unusual bullet diameter (.330) so Reloading decent ammo isn't the easiest either.

Work on consistent trigger pull and not tensing up. Honestly at the sub-moa level a lot of improvements also come from the gun itself. A lot of ARs don't shoot that accurate even from a bench rest.
