Does Michael Hampton ever actually break down his process for gesture drawing? This is the closest I can find in the beginning chapters of his book.
I'm trying to learn his method of doing it, and while the book is great so far, I feel like I'm just reading tips on figure drawing and examples of what to do, but not shown how.
I just wanna produce good gestures.

Did you read the text around it? He explains it pretty well. As an artist, you should be thinking in more abstract terms than just step one, step two, step three.
He uses the concept of rhythm and the ability of line to guide the eye to describe the action of the figure from head to toe, literally.
Supply it with Vilppu vids (Hampton is his student). He tells you to use lines going through, over or around the forms to describe what the figure is doing.

sculpting is really good
its quite different from boxmodeling in maya or something
zbrush is amazing for people who like to draw, it also helps you learn plastic forms and stuff

Look, they're more expensive, but see if you can find those water soluble oil paints. They finish about the same, keep texture, take as long to dry, but you get to skip the turpentine completely.
Turpentine is horrific. Even the "odourless" turpentine can give you a headache within 20 minutes if the room you're in isn't ventilated well enough. If you're using the genuine, reeking article, have fun staying coherent long enough to paint anything.
Turps aside, oils are pretty fun to play with and then paint with. There's so many different ways to paint with them!

Why do anime stylized eyes that look disproportionately large look decent sometimes, yet horrible and close to symbol drawing in other times? Is there something I'm missing after studying realistic eyes/placement?

All the facial proportions are modified to make the large eyes work.
The eyes are only extended vertically and usually have the same width as real eyes, keeping them still somewhat based in reality.

Some artists are good at drawing anime style where even though the eyes are huge everything still works, while other artists clearly struggle with the high level of stylization. Chris Hart is a good example of an artist that can't nail the anime look very well
