What was it about Peter Abelard's ideas that got people so upset and caused so much arguing and controversy with him and then later people like Bernard of Clairvaux?
He's a very important thinker in that he basically founded scholasticism. He played a big part in the West and the Church embracing reason over blind faith, viewing the universe as something that should be understood logically, and also in turning Aristotle into the main intellectual authority.
But the opposition to him had less to do with his philosophical positions than with personal rivalries. The cathedral schools of France were a highly competitive environment, where teachers depended in their ability to attract and keep students. Some teachers would go to others' classes and heckle them, engage them in debates which could become vicious. Abelard was especially abrasive and especially good at putting down an opponent.

The concept of a "privilege" is of completely artificial origin; the idea that one person or group of people can deny an individual the ability to perform a certain action or access to certain goods/services is a byproduct of a constructed societal bias and has no natural bearing.
Individual rights are the inverse of duties on persons to not fuck with your person or property prior to society. They are prerequisites for any type of society.
Civil rights like due process or the right to vote are semi-contractually provided by a government because do not do so leads to abuses by government.
Modern positive rights like the right to education or healthcare is pure postmodern memery that is made out of thin air and derives not in the least from natural necessity as the more traditional rights do.

Probably not at all, since the whole exchange sounds apocryphal, especially the letter supposedly written by a Sunni Muslim ruler.
Most likely a simple letter was sent demanding surrender, and the Cossacks replied, probably rudely, and the sultan was just told "They declined," and then some romantic generations later thought he'd test his literary talent and exaggerate the entire exchange, making up the most flamboyant (if inauthentic) letter he could from the sultan to purposefully match the slew of invective metaphors in the response.
I thought about how cool it would be to be the Eastern Roman/Byzantine Emperor - Basileus, Emperor of the Romans, Autokrator, complete with the purple robe.
Then I remembered how many of the Emperors ended up being deposed and subsequently castrated and/or blinded with knives and crude implements, and then I realized I'm glad I can live in the modern world and pretend-play to being Basileus thanks to my strategy games without actually being maimed in a terrible way.

Sure, war and violence is fucked up and times of peace can be good too, but is there truly a better feeling than conquering lands, settling areas, and erecting glorious monuments and cities?
