Shaolin monasteries relied on themselves for protection of their lands since Chinese secular, bureaucratic patrons would come and go without much guarantee of continuity or a supranational organization that can administer and defend it from afar with top-down political influence.
Christian monks however could reasonably rely on aristocratic patrons, landed families, and generations of knightly houses or free city militiamen to protect its interests. And if they couldn't, there was the network of bishops and the pope/patriarch who could appeal to imperial or royal authorities to do the job in a pinch.
As for why little came about from Viking raids, it's probably because most raids are fictional accounts written centuries later in a time of peace to give a monastery a legendary founding story and fiery baptism against heathen forces.
