I'm a design student and I really want to learn to make stuff like this but I'm just stuck on the process of how to do it. Any pointers?

I need to reteach myself gradient mesh. my illustrator teacher breezed through it and I never grasped it. I feel like I'm missing out on a powerhouse tool.

The top looks like that because I've yet to add the green thing on top of it. The center part at the top (which is now dark red) won't be visible
