i like extremely soft gradients so its enough you dont notice it but it also doesnt look extremely plain.

This, flat just generally looks better.
Too big of a gap in between colors that make the gradient looks sharp. Try and add a bit of white on all the colors. Just a touch to give it a smooth gradient effect.

Gradients looks good (in print) as long as you apply correct colour theory. i.e. don't do a gradient from primary yellow to primary blue.
Flat looks better most of the time.
Also minimalism is mainstream right now.

I don't always gradient, but when I do, I interpolate through a perceptually uniform colorspace.

Depends on the type of printing. Sure you could run into issues with Offset web of your colors are a full mix of CMYK, but if plan accordingly it will come out fine.
Same goes with flexo/gravue... Obviously 2 color screens will look nasty blending into each other, but by bleeding/overlapping the screens or achieving the gradient via overprinting it will look beautiful.
