Just use something simple like Elementary OS if all you you want is a good UI and internet browsing. It's probably the most user friendly Linux distro.

Install some minimal distro. Doesn't really matter which. You could turn your little notebook into almost secure TOR workstation or something. Almost is always just because it is.
