That's not their motto anymore ( http://time.com/4060575/alphabet-google-dont-be-evil/ ) because it confuses the employed when they are told to do something they consider to be unethical. it's not supposed to influence company practice and it's mostly just a PR catchphrase vand not a real motto

google isn't evil they're just at the point where they're too big not to suffer from institutional stupidity
their recent policies on "egalitarianism only when it's convenient and looks good on paper" are a good demonstrator on that, but if you want to get more technical, consider that their whole modus operandi is to sponsor your web searches using advertising dollars. to make good money on ads, they need to be really good at predicting what you want to spend money on before you spend it. consider how infeasible it is for them to do this without profiling everybody, and why profiling can be a negative thing.
also consider that "tailored" search results are just confirmation bias applied at scale, and that they can absolutely be used to do nefarious things such as influence elections and spread lies
