If you need some normal quality video you could use an raspi + an raspicamera and record. If you need relative high end and wide capture you could go for somethin like gopro, there is even that it 'stealth'. If you have more money grab an canon t6 or equivalent with an 70-300 for telephoto/video. If you mad rich go for a fucking dron with a RED setup.
