-Y or -X are arguments to ssh which forward your local X server to the host you're connecting to, so you can for example modify your server's partitions using gparted on your local machine. screen is a "tiling terminal manager", it allows you to spawn multiple terminals in a single ssh session, as well as detach a session to reattach it later, useful for lengthy manual updates.
