Artificial Intelligence sounds cool and all, but is it actually possible to get a job in this field, or is it all just research?
I've heard about data scientists, but that sounds boring in real life.

I'm a student and I'm switching to CompSci from CompEng to work on AI.
Japan would probably make the first breakthrough in AI girls in like 5 years.

What does an AI engineer actually do? Surely once the AI is built it'll largely be able to maintain itself at which point you'll be out of a job.

Yes, they're called AI "engineers" and you use basically python libraries to get/examine data and come up with algorithms. The libraries wrap C++ libraries like Tensorflow.
Plenty of AI courses on edx.org or get Norvig's book on it. For bezerker AI, and you've already read SICP, then look at Adventures in Symbolic Computing by Sussman specifically his paper Art of the Propagator it's pretty awesome, but you won't likely be doing any of that most AI these days is just python libraries hoovering data, then making a decision, sending info to some API somewhere to change search results, ect.

Finance is doing AIML for automated investing solutions, and customized financial advising.
Retail is using it to offer better suggestions for products people might like.
Logistics uses it to create better shipping routes and material movement.
