I don't play AAA games or use Adobe products, should I switch to a Linux distro? Currently on Win 7. It's a fairly old build but can run most games with low settings. Will I see an increase in performance?
The main reasons I want to swap are possible performance increases, distrusting MS, and having always been interested in all the different distros.

It depends on the game on whether you'll see an increase. I wouldn't expect one most of the time, though. You're gonna free up a bit of your RAM and the like running Linux, so it could devote more to a game, but the game is on Linux, so....
My personal advice is to go ahead and do it, so long as your gaming library is compatible. Even if you don't notice much difference in the games, it will feel like your computer has new life breathed into it.
Also, if you're a complete newb with Linux, I would recommend Mint over Ubuntu. Mint feels like the direction MS should have gone after Windows 7, especially if you get the right theme installed (I usually install Minty on former Windows users laptops when they make the switch).

I recommend KDE based distros(Kubuntu, Slackware, etc) if you're coming from Win. The layout would be familiar to you.
Also try live booting as mentioned, but if you have the 8+GB of ram, try rambooting to get insane performance.

Thinking of duel booting Ubuntu and Win10. Win10 would only be for games. Really tired of windows shit and just want a stable os thay doesn't spy on me

recommend xubuntu over unity
