Not OP but I have a similar question, if I have both Windows and Ubuntu installed in a dual boot and I want to wipe both of them and just install Ubuntu how can I do this?

You boot from LiveCD/USB, delete the Windows partition with GParted and then you can resize the Ubuntu system partition to eat the newly freed space. If GRUB gives you any issues just go configure it to remove any mention of Windows.
