The opposite actually, this feature makes it so that instead of having to allow installation from unknown sources for all apps to use f-droid, you can now enable each app to install stuff individually, which is more secure and the ideal solution for using multiple app stores on one device.

No. It just means that instead of having an option to let all apps install unknown apps you can select trusted installer apps. For example, you're right now limited to 2 options
1. Tick the "ALWAYS install apps from untrusted sources", which can lead to potential abuse
2. Not tick it, and have to manually press "trust this app only this time" every time you install or update an app from fdroid/yalp/aptoide/etc. This is technically safer but very annoying.
But now it will be better since you can actually tell your OS that fdroid is a trusted source, so apps from there will be installed without your intervention, all while apps pushed by potentially malicious sites or other apps will be blocked. This is a good change and they should've done this sooner.

But can you set Google Play as an untrusted source, which obviously they are?

Probably not, but why would you even have it on your phone? At least disable it if you're not rooted.
