gqrx for waterfall, gnuradio-companion for experimenting with random signals.

I've had good experiences with https://github.com/DSheirer/sdrtrunk for P25 phase 1 decoding.

dump1090 for ads-b plane tracking, with proper feedline, amp, antenna, filter, I typically decode at least 1 ping every day from planes over 250 nautical miles away.
