Alright, I'm going to build a freeNES. Is there any glaring flaws with this build? I'm hoping to get 2 of the HGST drives with one running as a backup of the other. Is the Pentium going to be fine for just simple file transfers with the drives running ZFS?

Looks fine. You don't have any RAM there; you'll want 1GB of RAM per each 1TB of storage space if you're using ZFS (you don't strictly *need* this much, but it helps).
