You can't just "hide" data anon. OS level hiding is useless because it's still there on your hard disk. Your best bet is to hide it in plain sight and/or encrypt it.

Truecrypt hidden partitions were a thing: there would be an encrypted partition with *two* valid passwords, so under pressure you could give up the password to the one that just contains your bank statements or something. Otherwise, there's steganographic approaches to hiding files in music and videos.

An encryption container is of fixed size, it's literally a virtual drive. (I think some programs let you extend the size of them, but it'd be a waste of time, just make a fucking new one)
It's not the same as a compression container, which is dynamic size.
