First of all, /dev/null will stop providing data before the first byte. This is why it will finish with "0 bytes copied". You want /dev/zero, but you'll have to specify a size.

Second, many filesystems will create a new data block rather than reuse the original on a complete rewrite. This is pretty much always the case on SSDs, for example.

Here's a proper "file wipe" with dd assuming that's *not* the case (e.g. FAT32 on a spinning disk)

dd if=/dev/random of=file bs=1 count=$(wc -c < file)
