Xeons are essentially just desktop i7 processors with a few disabled features (like ECC, multi-socket, etc) enabled, and higher binning tier.

Are they good? Yes.

idk about current prices but when i buil my previous system in early 2016 i got my E5 2670 for 40$ of ebay.
the only real drawbacks with going for a used xeon are the pricing and availability of used/refurbd mobos (i had to spend 200€ on a refurbd asrock x79) and the relativly poor single thread performence.
but overall still a good value if you don't need MUH 500 fps in csgo at 720p low

I don't see the problem with a Xeon if you are not using it for server use.
I've got a Xeon in my current PC which is not a server, people saying that they are only for servers are wrong ;^)

it's a much better all round system with a r7 1700 than with 2x e5 2760 (better single thread, recent IO, lower powerdraw+heat, more gaymen fps ect.) but you will miss out on some raw power
