The gentoo installation will be quick compared to the installation of the software you are probably going to need post-install, like X, your DE, firefox etc. You will probably also not get your audio, video etc working so you'll compile your kernel multiple times. It will take a few days setting up a working system.

In the handbook there's a step that says it's not required if you don't use systemd, I did it anyway and it took over 4 hours to complete with an i7-6700k. I would recommend finishing the installation then running that command before you sleep or when you'll be away for awhile
