How the fuck do I stop windows from replacing/deleting/messing

How the fuck do I stop windows from replacing/deleting/messing with my folder.jpg files? They always replace may high quality cover art with some shitty 100px image.

I also use folder.jpg files, but they have never been replaced. I don't think it's the OS. Unless it's another "feature" in Windows 10.
