Latest software is not the point of Debian though. They use older, but thoroughly tested and stable version of software. You don't install Debian to stay on the bleeding edge. You install Debian to have a rock-stable OS.

Debian testing is quite usable, their packages is about two or three version behind an ubuntu repo.

Practically speaking, I have no problems with packages in stable. The only time I actually needed something newer than available in the repos was python 3.6.
