Because I don't use linux on a desktop, only a laptop and using a dock like that to launch programs is horrible because touchpads that aren't on macbooks suck.
So I use xfce with a launcher program that lets me hit a keybind and type in letters until the program pops up then hit enter to launch.
I would use gnome on a desktop.

Gnome has the same default behavior. That dock is hidden until you bring up the activities overlay by default, but a bunch of people like having it on always for some stupid reason. I think technology adds so much value to our lives, specifically computers and the internet that you really don't need any money to be happy. You get almost endless entertainment for nothing but the cost of hardware and internet.
For example you could do a budget build with an old prebuilt and a second hand GPU or something like a rx 460, $80 1080p monitor and $40 internet and you're SET.
I think the value added to the poor's life through the internet is going to become much more important in the future as jobs get scarcer. Shit some people here can entertain themselves all day with just an linux iso and a $120 thinkpad.

It doesn't have non-integer scaling so everything is either way too small or way too big on HiDPI monitors. Most GTK apps can't even handle the integer scaling it currently offers. Apparently it won't have decent non-integer scaling until Wayland is more fleshed out.

I don't use gnome because I prefer to use extremely light desktops, I usually use Linux inside a VM.
But if I was to daily drive Linux, I'd probably choose Gnome. It takes a tad bit of getting used to, but once you've adjusted to it, it has a pretty efficient workflow.

use any linux you want as long as it comes with unity 7 (unity 8 is dogshit) or GNOME3 (only if you use extensions such as dash to dock which can be installed easily and enabled from a web browser)

Enlightenment is buggy as fuck (fact) and has shit themes (IMO) but its used in Tizen so it might be usable with touchsreen, too. Also, it has optional tiling with two or three layouts which can help.
