I want to learn assembly. I know that each CPU's assembly is different, but I want to get a feel for it. What's a good platform on which to learn?

I'm just fucking with you dawg, I just started learning and it's great fun. If you are getting into it just build from scratch, I'd learn maybe MIPs starting out.
If for reversing, check out lena's tutorial, it's one of the best early ones. Then start doing basic CTF packs. I would not suggest looking up solutions for these as the brain stretch is quite rewarding in the end, even if it takes days.

Learn something simple like ARM or MIPS. Disassemble your C programs to see what they compile down to.
