You can't do irreparable damage to any OS. On mobile phones it's as easy reflashing all partitions with the required software, using whatever protocols are supplied by the bootROM or first bootloader. In iOS you just plug it into iTunes and restore with DFU mode, where the bootROM gets loaded to memory, sets up a serial interface through the charging port, then awaits key exchange and instructions from iTunes. On Android you might have to use JTAG and external flasher if you delete the first bootloader, as the bootROM is not interactive. That'll never happen unless you do it on purpose through bootloader mode though. The second bootloader is usually Qualcomm Aboot, and it's also really hard to break or delete. When people say they "bricked" their phone, they're usually referring to Aboot. This can be reflashed with a USB cable on most devices. When you do a bootloader unlock, you're unlocking Aboot. This can also be used to flash kernels, recoveries, operating systems, and modem firmware, and is fully interactive over USB.
