I want to make my own game server for Jackbox Games (one of those games). I've already started looking st wireshark pcaps of the conversation that occurs when you try to start a multiplayer game, and it's unencrypted http and websocket.
What's the next step? It's my first time doing something like this.

An actual response:
0. learn to use at least one web application framework: Django, Flask, node.js, SpringBoot, etc.
1. List all required endpoints and infer their logic (reverse-engineer it)
2. Design a database scheme
3. Implement the logic
4. Deploy the application to a web accessible server (AWS has a 12 months free plan for small servers, and you get a public IP for free)
5. If you want to use the original client, then each user should redirect their jackbox traffic to your server (unless there's an easier way to change the address of the server application connects to, like a config file)
This is a very simple overview of what needs to be done. Expect it will take you a few months to get everything working properly (less, if you are experienced in programming webapps/reverse-engineering logic)
