I'd switch out 7-Zip for Easy 7-Zip, though. Why make a three mile long right-click context menu when you can have a GUI?

I'm also not sure FFmpeg belongs in this type of guide. It's great, but it's command-line. If FFmpeg came standard with Windows, 99.99% of people would never use it because double-clicking it doesn't do anything. It doesn't conform to the Windows philosophy that the user should be presented with something that's somewhat self-explanatory.
A generic setup guide should get babby to the beginning. Most will be fine at that level, and anyone who outgrows what the beginner tool can do can direct themselves from there.
FFmpeg isn't a beginner stage, and you can go right from Handbrake to learning to pipe Avisynth scripts into your encoder, so command-line FFmpeg sits in a weird position.

I think Handbrake or a FFmpeg front-end are more guild-worthy. (Are there any good front-ends? I've only used Xmedia Recode and, while it worked, it was a bit buggy)
