they do though most of the back end stuff is done on linux machines

they don't on the work stations its because no one is used to it (except point of sale and other terminal are almost exclusively linux based)

I installed linux to run a hypervisor at my parent's house. One VM serves files, the other VM steals/borrows TV and streams it with tvheadend. Windows might be able to do these things but it would cost me a lot more and it wouldn't do these things particularly better.
