These are my current specs. CPU is cooled with an H60. Since I go to LANs with my friends a fair amount, plan on flying out to one in the near future, would I be able to put this in a mini ITX rig? New mobo, PSU of course

You could try MATX instead, for a nice happy medium. I don't think there are any ITX mobos for socket AM3+ anyways. Failing that, a mid tower is likely to take up most of your suitcase, so if you can't pack light you'll need to check two bags. Go to a craft store and buy some foam blocks, and cut those down to fill the empty space in your case, especially around the GPU to prevent it from shifting and damaging itself or the mobo. If you're putting it in it's own checked bag, you can use the foam to wedge the case inside as well.

Or you could just realize they're pointless and take them right off. Rubber mounts may work to quiet a cheap shitty fan that rattles all over the place, but a quality fan like a Noctua, Noiseblocker, or Gentle Typhoon has no need for them.

There isn't room. The fan mount that the tubes pass through is 92mm. That back panel was specifically designed to allow the installation of a 120mm CLC in that location.
