I use GNU/Linux and an iPhone, what now. The iPhone is well built, reliable, no stutters ever. I borrowed an android phone from my friends and they seem way less smooth, almost unusably so (almost).

There is a library called libimobiledevice that lets you sync with media players like Banshee or Clementine but IDK if it has been updated for the latest iOS. Your best bet is probably a VM with Windows and iTunes. Or just get an Android.
Use iCloud to backup your iPhone. If you don't want web apps, you'll have to ditch the rest of iCloud and use all google stuff
