apartment is much easier to find than a job of some sort. Just find any place to rent usually owners accept cash but you'll probably raise suspicion of being a criminal. You still need money and to receive it you usually need a bank account, which means you can't live off the grid unless you already don't have tons of money in your pockets or you do something illegal for living. Alternatively, you could find jobs which pay you in bitcoin but I really don't know if there are ways to exchange them into currencies irl. You could exchange them online and get $$ on paypal but to use paypal money you still need a bank account/credit card.
Notice that in most countries it is illegal to get paid with government money ($, €, etc) off the grid, so unless you want to risk jail time I'd recommend getting some money before doing this.
Internet connection will still give you away if it's contract internet, so you could buy a new phone (cash only, without contract), not do anything with it (don't add any accounts to it) and just use it as a hotspot and nothing more, there are plenty of really good services which don't require you to have a contract but rather just an SIM card (without having to give your name, location or anything else) which you just renew with cash each month. However, those usually have a data cap of 2-20GB per month depending on where you live and how much you're willing to pay, and internet speed may be a problem (it could be anywhere between 0.5Mbps to 8Mbps, again depending on where you live). You could also secure yourself with a VPN to try to hide your ass from your ISP.
Your location will still be known however since you'd use an internet connection, but hopefully your identity will remain safe. It's impossible to litteraly live off the grid in today's world unless you have connections with criminals or politicians (>inb4 what's the difference) or bury yourself underground.
