My local dollar store has a register that runs off a Linux kernel of some sort. And my local Dunkin donuts does the same as OP. 3 monitors with the menu on them. I was in there when they happened to be updating their menu with new stuff. They actually had windows and Ubuntu. I saw the center screen flash Grub real quick.
