I am extremely interested in using RemixOS as an alternative to Windows for nonfree things like video games and social networking. Does anyone use it? I read that one needs to edit the boot option to enable the use of more than 8GB of disk space, but nothing that says how one would use apps that would rely on multitouch on mobile devices. What even is this?

It's androidx86 with the RemixOS additions added in. A trackpad might work, android has built in support for mice, so maybe. It's 100% impractical to run on anything but a HDD/SSD so be sure to set that up. Driver support is iffy, limited to whatever androidx86 supports as of right now.
It's decent if you need to use mobile apps, and as for games it's the same as any other android device. Performance is obviously based on GPU and CPU drivers, which again, depends.
