I just got a hand me down thinkpad. It's pretty old and beaten up so I wanted to throw a decent Linux distro on there. Something relatively easy to use as I haven't used Linux for years.

It depends on what you want to use it for. Gaming? Might wanna upgrade the GPU. Get a less memey case and peripherals to save some money.
You won't need the i7. Get an i5-6600K instead. Get a 1080. Are you overclocking? Otherwise you won't need water cooling. Depends on how silently you want the thing to run.
Also AFAIK current gen non xeon Intel CPUs only support a memory bandwidth of 2133mhz. Not sure if higher speed RAM could still be beneficial or if that is true at all.
Your setup is mostly overkill except for the GPU. But if you have the money to blast sure go for it.

CPU probably since I don't see games needing more than 4 cores with HT in the next 5 years. Graphics card will need to be replaced before then but should last awhile if you're fine lowering settings.
Get your CPU at microcenter if you have one near you as it's $50 cheaper there.
