I don't see myself using git since it's not automatic and kinda shit for binary transfers.
I guess what I really want is something like an NFS share cached on disk. This cache would be kept across reboots and allow the laptop to work even when it's unable to reach my desktop.

I've been using Resilio Sync (was BitTorrent Sync) myself; the initial setup is a bit klunky, but it works well for me, and sounds close to what you're looking for.
