Well, first off, it allows you to boot easier than ever before. One efi file on the root partition and you're set (if the FS is recognized by the UEFI).
Second, it actually is an OS by itself: you can run a shell, you can write a module for it, you can even launch a browser if you want. Possibilities are endless compared to BIOS.
