NVMe SSDs aren't for a faster OS boot, they're for productivity/scratch disk/VMs. NVMe and M.2 are not the same thing, M.2 is a form factor

I can't use Linux because:

1. I game (massive steam library)
2. My university course requires use of MS office
3. I have a 1600x so no W8/7

I'd like to convert to linux but I don't see how I can given my use case

If you like a system and it does everything you need there is absolutely no reason for you to migrate to another, it means you are the user base of that system. Every system has faults. Windows can be a buggy shithole filled with trojans but linux will find any way to make simple things incredibly complicated (have you ever tried creating a bootable USB without using the command line?). How do you AMDfags deal with this? I want to use my 128GB SSD as cache, while my 4TB for the main OS and the many applications I need to run at once. No, I can't install the OS on the SSD, the applications have to run on the main C drive.
