honestly depends on the size of the project, personally back in school we used git for everything but honestly never really needed it for the majority of our projects, and a simple sync'd dropbox or something would've sufficed
But later on when working with 4+ people on codebases with that grew to several thousand lines with a week or two. version control was absolutely critical for getting any kind of co-ordination done.
