most of the datasheets from reputable manufacturers are good and contain loads of info regarding registers, their purpose, and their address spaces and such

I would suggest you learn something like C. Don't listen to /g/, learning C is a lot of fun and you can get the basics in a short time.
Other options would be Haskell or LISP, also great input that will make you a better programmer..

You mean C/C++? C's standard library is well documented. C++ has basically multiple standard libraries so I can understand how documentation may seem poor, but for the most part it's such a widespread language that finding examples is pretty easy.
If you mean third party libraries, well, that can vary widely of course, and that's just the fault of the third party library maintainers. Other languages might suffer less from this just because they include more things in their standard libraries which get documented as part of their own process, where as C has a much simpler standard library so there are more third party libraries written for complex tasks by individuals of differing levels of concern for thorough documentation.
Back to C's standard library though, often documentation is as simple as$ man [function]
