On my main desktop PC that I've had time to set up: no desktop environment, just i3.
On a new machine when I need to install a GUI asap without having to seperately configure basic functions like screenshots: Gnome.

There is no way. Even if you sell it through iTunes people are still going to have some means of copying it.
