I didn't watch the video but I assume you mean simply cracking the eggs straight into the pan and mixing them as opposed to breaking them into a bowl and mixing? I do that because I don't care to spend the time or effort to clean a separate dish when I cook my breakfast. Not to mention there is really very little difference when you are spooning in a mouthful of eggs into your mouth and chewing. It pretty much tastes the same.

Gordon Ramsay does his scram in the same manner. Nothing wrong with it provided you are not overcooking them, like this lunkhead is doing. There's enough heat in that pan. You can scramble them a bit then take them off the heat, keep constantly stirring and shifting them, stick them back on the heat, take it off, etc. Gets you a very creamy scrambled egg that should not be overcooked.

I mean, it's not some kind of unholy sin against the kitchen gods. Actually if you want the cute "white and yellow curds" effect you have to do it that way. But both major styles of scrambled eggs prefer blending (scrambling) the eggs before they hit the pan for both texture and taste reasons.

[spoiler]grandmothers old recipe, very softly boil your eggs, like 4 minutes enough that it holds together so you can remove the shell.
Heat up a pan with oil. toss the eggs in and start squashing them with a fork. decent high heat and keep squashing and turning constantly. add lots of salt.
Place in the fridge and eat when cold as a side dish[/spoiler]
