I was thinking of stopping eating meat and eating seitan or tofu instead along with rice/beans etc and wasn't sure if I could keep my body in the shape it's in now.

Not really how it works. More likely you're muscles are more defined now that you're losing fat.
Eating at a deficit will make your body drop mass, muscle and fat. Keeping a high protein uptake will help your body keep majority of that muscle while it burns the fat for energy instead.

Skinnyfag of 23 years. Was wayyyy skinnier than this just one year ago, started going to gym last summer (since May 2016) for 4 and a half months then quit gym and started doing home workouts because of work. My workout (more of an exercise than workout, really) is very simple and works for my current self:
Mon: 100 push-ups,
Tue: 100 sit-ups (I can hold a dumbbell when doing sit-ups now),
Wed: 100 squats (holding 7kg dumbbells),
Thu: 100 arm exercises x 3 types of movements (don't know what to call them, not a native speaker and don't care enough to find out yet)
Fri: Rest,
Sat: All of the above but only do 60%,
Sun: Rest.
Been following this schedule since Oct 10, 2016 and today is Feb 10, 2017 so I guess this makes it exactly 4 months of following this simple training schedule, without skipping a day.

Now I don't have muscles yet or anything but I've gotten way less skinny than before (you've got to see how malnourished I was before all this), and I feel good and much more comfortable with exercising now. When work settles down and I have more time I'll get to lifting more seriously this summer (starting June here). (And yes I have read the sticky, but most of the info is not that useful yet currently. I'll get to it when I'll get to it.)

I'm 5'7
I weighed 88kg (194lbs) @ 30% bf and started exercising and going on a cut at 2000 calories, When I hit around 84kg (185lbs) @ 24% bf I had to go to 1800 calories to even continue the cut because my weight wouldn't move. Now weigh 80kg (176lbs) @ 20% bf but my cut is stalling and even sometimes going backwards. The last two weeks I've been unable to get below 80kg. I even went back up in weight to 82kg and my bf raised to 24% and keep fluctuating between 82kg and 80kg @ 24% bf for the last two weeks.
My calories are consistent. I am counting everything I consume. I don't drink soda. I'm doing a ton of cardio.
My weekly routine -
Mon - Cardio 1h30m+
Tues - Workout A, Cardio 30m
Wed - Workout B, Cardio 30m
Thurs - Cardio 1h30m+
Fri -Workout A, Cardio 30m
Sat - Workout B, Cardio 30m
Sun - Cardio 1h30m+
(+ just means if I have to hit at least 1 hour and 30 minutes, if I feel I can do more, I do.)

What are you doing for cardio? Low intensity cardio is not going to lower your weight that much.
Try some HIIT instead.
