So after a long weightloss journey I'm finally able to do shit again.
I have a trip in 5 months and I'd like to look at fit as possible for it.

Will I gain weight if I stuff myself for just one day? I'm planning to eat 3000+ cals on Sat but I'm scared to even gain one kilo of bodyfat. I'm currently 68 kilos, 175cm (149.914 pounds/ 5'9") but I used to be an ex obese guy which might help explain my hesitation. I'll go back to my normal eating schedule on Sunday (1500cals) which according to many online "calculators" is below my TDEE.

To gain a kilo of body fat, you'd have to eat around 7-8k kcals iirc. Eating more at once will likely reduce the overall effective intake, but since calories are only a very rough estimate of both what your body takes in and what it does with it, I don't think there would be much of a difference.
As for your problem, 200 grams of body fat won't show up on any scale, but you'll likely get it.
