Can someone explain why drop sets aren't used all the time? I mean I've heard it's about pushing to near failure, so why is it not best to just push each set to ~12 and drop the weight accordingly as you get fatigued.

Idk what kind of rack shit you're talking about, but I load the weights on a bar from the ground. Start 135, and progress quickly, but not too fast. Make sure your form is good before moving up in weight every time.

Start with the empty bar and slowly increase the weight until the deadlift is a challenge. Put the weights on when the bar is on the ground.
You can secure the weights with a clip. They will probably already be on the bar when you get there. Some people choose not to use clips so if they fail they can just tilt to the side and the weight will fall off. This is personal preference.
I started with just the bar and I weighed 62kg then. Might be embarrassing but worth working on your form first
