Are homemade hamburgers unhealthy? If so, to what extent? Will eating them made my abs fade away? Any good recipes?
How could I know? You know what you're putting into them.
Hamburgers are my favourite meal, just war nice things in moderation. I eat them at least once a week, load it up with veggies and no sides. Possibly sweet potato fries, but only if I'm eating out.

They aren't the worst thing you could eat... but you won't get great macros from /most/ burgers. They'll only make your abs fade if you eat lots of them all the time. Eating in moderation and making sure you're hitting your TDEE goals will ensure your abs stick around no matter what you eat, so go for it bro.

normally i take a week off every two months, but this current break is the first in about 3 and a bit
from what i've read it's generally advisable to take a week off every now and then but it's hard not to feel like shit when you do

You should get it checked by a doc to see how bad the tear is. Tore my superspinatus in my shoulder took 6 months off and still hurts from time to time.
