No.
It is possible through certain conditions (usually thyroid related) for someone's TDEE to be so low that a calorie deficit is really hard to maintain, but in that case, they would feel so sluggish and tired all the time due to their body not using as much energy as it should be doing.
But no, a calorie deficit and weight gain are entirely mutually exclusive. Just bear in mind that what is a calorie deficit for a healthy 180lb person could be way above TDEE for someone of the same weight with a thyroid condition.
If you think you have a thyroid condition then go see your doctor, as they are easy to treat and not an excuse for being a fat shit.

26 years old, been working night shifts now as a care worker for over a year now and im starting to feel incredibly lethargic. Convinced im not depressed currently so i went out and purchased some vitamins and iron tablets.
The lack of sun from being on nights is whats getting me down im assuming.
Do these things genuinely work, im feeling slightly more energetic after a few days but is this just a placebo effect ?
Also any tips regarding night shift work that could benefit my health would go a long way, cheers.

You have to force yourself to get some sun before you go to work, if you can't you're fucked. Has a lot of hormonal benefits.
If you can't get much sun take cold showers, make your body think it is winter.
On working night shifts: Don't. They are bad for your health. If you are not getting any sun then the vitamin you are really lacking is vitamin D. Buy a strong vitamin D supplement and get like 4-5000 IE a day.

Nah, that's the upper part of the oblique. I circled out the serratus anterior in red. That muscle is usually not very visible unless you're flaring your lats or putting up your arms.
The most effective way to hit them is trunk twisting exercises. They're also supporting muscles during normal ab exercises and isometrics, including stuff like supporting your core during standing heavy compound exercises. The best way to make them visible is being low bodyfat.
