I don't really know how to give proper rate, but these profiles in my opinion are the strongest. Not necessarily the most prominent definitions but as an overall profile these are very good.

How would you recommend going about that?

I'm naturally quite tall and skinny, with a height of 6'3 and little body fat. However, saying that and as you've picked up upon, i've got a lot of fat in my face.

You're not as lean as you think. Almost everyone underestimates their body fat and of course genetically some will store more on their face than others but no one with an obvious 6 pack will have an undefined face. Increased water intake will reduce water retention too.
