I had an idea for a plant-based race whose tactic was to mimic the most dominant life form.

Depending on version it might look like an insect, or some weird larva thing, or maybe a tentacle (Or rather vine) thing with leaves. Most of the time it remains buried in the ground, occasionally moving and burying itself elsewhere if its current place is not considered acceptable.

During this period it makes a conscious effort to figure out who's running things on the planet, or perhaps who it would best mimic to take it themselves. During this phase its form changes, in our case it would start looking more like a humanoid root vegetable or arthropod. Once at the size of the dominant species' juvenile, they bury themselves for one final transformation, eventually emerging from this pupal stage in the form of what it intends to mimic (In this case a human). After rapid growth it becomes the size of an adult and infiltrates their society, occasionally releasing seeds or maybe spores to disperse themselves further.

It's worth noting that in their final form they aren't just mimicking appearance - to an extent they're also mimicking anatomy, which means that in the case of becoming human they lose photosynthetic capability. It's implied that their natural adult form (i.e. no dominant species in existence) is some sort of insectoid plant, though.

So there, transformation. Admittedly willing transformation from a hideous monster into a human isn't that interesting to many, though (I can understand the sentiment that unwilling human to monster is better).

While I like the concept of your idea a lot, my biology interest is screaming in agony.
Plants don't lend themselves well to extreme morphological changes.
If you want an organism which goes through metamorphosis, grows quickly and utilizes otherworldly mimicry, go with an invertebrate animal. An insect or a cephalopod. Or an alien life form.
Similar concepts to yours have been done in the form of Azusa from Franken Fran (Pic related) and Genestealers from 40k.

I've always found this funny, knowing botany. Plants in cartoons, videogames, comics, always have this extreme regeneration, etc. they are associated with regrowth and healing.

That is the exact opposite of reality. Plants are totally incapable of regeneration, and healing. Thick cell walls prevent it. plant growth is exclusive to Meristems. If you cut a plant, all it can do is scab over, or excise the dead tissue entirely. Growth only can occur at growing points. Meristem nodes. Such as branch bases, and flower bases.

only animals can heal. Either simple regeneration of skin, etc like we do, or the more advanced full on regrowth of lizards, starfish etc.

You don't necessarily have to go with animals for extreme regeneration.
Fungi are extremely hardy due to the way they are constructed, no wonder Lovecraft wrote about them.
Microorganisms are also very interesting in regards to regeneration.

The irony is that when I originally developed this idea I wanted it to be a fungus before someone told me that was a stupid idea and that it should be a plant. This is made worse by the fact that the setting this was developed for has barely any sunlight due to fallout, and in retrospect believing them was a terrible idea (I might as well claim plants are non-existent, in fact).

Supposedly we agreed upon it just being a plant that can turn into a fungus in adverse conditions, but...yeah. /d/'s probably right on this one.

This is an honest question and not bait. I ran into a TF video, it's definitely not my thing, but now I'm genuinely really curious what elements or parts about TF are the "turn ons"? Especially in TF sequences where a woman turns into something decidedly non-sexy?

There's a strong dominance/submission aspect to it. You can see for example the OP specified transformations of unwilling women... it's very comparable to someone submitting to their role in a dom/sub relationship. Oftentimes they're changing mentally as well as physically and the "giving in" to those changes is part of it. Some put themselves on the other side, being the ones to control the changes. It can be different things for different people. Sometimes the subjects turn into more powerful forms, but most of what I've seen is submissive.

Loss of control is big for a lot of people. So is bondage. TF is a massive loss of control, and you wind up in a body that wasn't even yours. In essence, you're in a whole new kind of bondage, trapped in a different body.

When it comes to women turning into non-sexy things(slugs, grotesque monsters, etc) there can be humiliation attached to it. I personally like being so far removed from humanity that I'm unrecognizable.
