It's been a while to pick out the specific complaints, but I think the beschemel ruffled his feathers.
If you follow his recipe, I think you'll be fine with the outcome, but to someone that knows what their shit, he has some recipe flaws.
But still, for as popular as he is, I think it annoyed my brother that he has weak recipes. I keep trying to get him to make a youtube series just cooking good meals.

His channel is not simply a cooking channel, but one about recreating dishes from /tv/ shows and what not. That and his production value makes for great entertainment people can get into.

The beschemel? As I recall, it was fairly standard operation. His hollandaise method was a bit weird to me, and since I don't have an immersion blender I was just going to use Chef John's method.

I mean, yes and no. Most of his episodes do the meal as faithfully as possible, and then when it doesn't work out he remakes it with a bunch of trumped up ingredients and whatnot so that it barely resembles the original idea.

I never said anything about his production, the guy has it down. Good workspace, good tools, good lighting, good editing, good sound.
I would argue that there is space for a good cooking channel, though. I only watch Gordon Ramsey videos for his actual cooking videos, and they are likewise great presentation videos. I just wish they weren't spaced out so much between all of his shitty TV shows.

Looks like there's some room for improvement, though. Like, it seems that his videos would be more for novelty's sake, since they're all "woods cooking".
